For my daughter's 4th anniversary I wanted to do a different finish for the cake (most of the time I use fondant). Her party theme was under the sea and the color palette included fuchsia, turquoise, orange and navy blue. After some Internet research I decided to make an ombre cake, which is making the icing in different tones of the same color. I ended up using royal icing because I knew the consistency would be perfect and I could get more vibrant colors than if I used buttercream, for example. Cake dough was vanilla flavor -I make my own vanilla extract!- and for the filling I made a delicious caramel buttercream.
